Puran poli is an Indian sweet flatbread that popular in Gujarat and the state of Maharashtra. In Maharashtra Chana Dal is used as the base for the filling where as in Gujarat Toovar Dal, pigeon pea, is used to make the filling. Spiced with cardamom powder and ghee gives the puran poli an amazing flavour. The Jaggery brings the whole thing together! You can jaggery sugar, cane sugar, powdered jaggery or even sugar to sweeten it. This filling is then added to a roti and a flatbread is made. This is a Gujarati and Maharashtrian classic and is loved by all. The classic puran poli is every household`s favourite in India and rightly so! Do make our version and let us know how you like it!,

POORANPOLI Recipe|Renu dalal

INGREDIENTS

For the filling

  • ½ Cup toovar dal
  • 1 ½ Cup water
  • ½ tsp Cardamom powder
  • Pinch of Hing
  • 6 tbsp powderd jaggery
  • 1 tbsp Ghee

For the dough

  • 1 Cup wheat Flour
  • 1 tbsp Oil
  • Salt to taste
  • Ghee to make the pooranpoli

METHOD

For the filling

  1. Pressure cook soaked toovar dal with 1 ½ cup water for 2 whistles.
  2. Once done heat ghee in a pan, add the cooked dal.
  3. With a wire whisk mix the dal well. Cook for 15 seconds.
  4. Add in sugar, cardamom powder and mix well. Keep stirring to avoid sticking to the base.
  5. The mixture starts thickening up, keep cooking until the water evaporates and the mixture turns dry and thick.
  6. Once done, let this mixture cool down.

For the dough

  1. Mix all the ingredients to make a semi soft dough.

  2. Divide the dough into 4 parts.

How to proceed

  1. Flatten a portion of the dough with your hands and fill in a portion of the filling inside.
  2. Seal the dough properly and roll out like a paratha.
  3. Roast these on a pan with some ghee and serve hot.
