The aroma, spices and flavours represents Indian cuisine completely. Indian cuisine is a mix and blend of various aromas, spices, masalas and so so many flavours. The three layers - carrot rice, flavoured plain rice and spinach rice go together so well. Spinach rice is everyone`s favourite, but carrot rice will suprise you, the sweet tartness from carrots work so well with the rice, you can`t stop having it. So tasty plus extremely beautiful to look at. The star anise adds on to the look representing the Ashok chakra in the middle.

INGREDIENTS

For the carrot rice

  • 1 Cup Boiled Rice
  • ¼ Cup Carrot Puree
  • ½ tbsp oil
  • ½ tsp Jeera
  • ¼ Cup Chopped Onions
  • 2 tbsp Chopped Tomatoes
  • ¼ tsp ginger green chilli paste
  • Pinch of turmeric powder
  • Salt to taste

For the flavored white Rice

  • 1 Cup Boiled Rice
  • ¼ tsp ginger green chilly paste
  • ¼ cup chopped onions
  • Salt to taste
  • ½ tbsp oil

For the Spinach rice

  • 1 Cup Boiled Rice
  • ¼ Cup Spinach Puree
  • A Pinch of asafoetida (hing)
  • ½ tbsp oil
  • ½ tsp Jeera
  • ¼ Cup Chopped Onions
  • ¼ cup Chopped Tomatoes
  • 2 Garlic cloves grated
  • 1 bay leaf
  • ¼ tsp ginger green chili paste
  • ¼ tsp garam masala
  • Salt to taste

METHOD

For the carrot rice

  1. In a pan heat oil, saute ginger green chili paste, jeera, chopped onions, chopped tomato and cook for 2 minutes.
  2. Add in the carrot puree, turmeric powder, and salt. Cook for 1 minute.
  3. Add in the boiled rice, mix well, and set aside.

For the flavored white rice

  1. In a pan heat oil, add in ginger green chili paste and onions. Cook for a minute

  2. Add boiled rice and salt to taste. Mix well and set it aside.

For the spinach rice

  1. In a pan heat oil, saute grated garlic, ginger green chili paste, jeera, hing, bay leaf, chopped onions, chopped tomato and cook for 2 minutes.

  2. Add in the spinach puree, , garam masala and salt. Cook for 1 minute.

  3. Add in the boiled rice, mix well and set aside.

How to proceed

  1. In a plate layer the rice next to each other in a resembling our Indian flag.
  2. Carrot rice first, followed by white rice and then spinach rice.
  3. Place the star anise on top of the white rice resembling the chakra.
  4. Serve hot.
