Most of you knew her as a bestselling author and one of the biggest icons for vegetarian food in India and to Indians across the world. She was extremely humble for all her extraordinary achievements. At home, she was just a simple loving mother who made all this fabulous yummy food. No words would be adequate to describe my mother, she was full of life, humble, kind, generous, loving and would always look forward to the future. Always smiling a positive person she made many close to her see the good in humanity. Ever since I was a child I remember my mother loved to cook and entertain family and friends. Her cooking classes became legendary, there was always a waiting line of enthusiastic students to join. I would often sit through her cooking classes and marveled at how easy she made cooking seem. She had the knack of explaining the dishes easily and made it simple for one to remember the method. Wherever she traveled she always looked for new recipes to learn and experiment. She revolutionized the way people thought of vegetarian food. She made vegetarian food seem more exciting with so many varieties. She had a larger than life personality always ready to reach out to her many fans and admirers. She was very humble for all her achievements and her zest for life was unending. She supported many charities and was always ready to help someone in need. She made many friends and always enjoyed meeting up with them and cooking for them. She loved to travel and explore new places and was always on the go. She very often conducted charity demonstrations across India and the world.The last time I spoke to her she was laughing, smiling and looking forward to tomorrow. I guess that is the way she would like to be remembered.
