Baked corn sandwich

This is one more recipe from quarantine cooking. Simple to make and delicious to taste.

  • Preparation time: 10 minutes
  • Cooking time: 20 minutes
  • Serves: 2


  • 2 ½ cups white sauce
  • 2 slices of bread
  • ½ cup milk

For the corn mixture

  • 1 cup boiled yellow corn
  • 2 tbsp spring onion (white part)
  • 3 tbsp white sauce
  • ½ tsp oregano
  • 2 tbsp spring onion (green part)
  • ½ tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp grated cheese

For baking

  • Grated cheese
  • Butter for greasing the baked dish


For the corn mixture

  1. In a non-stick vessel heat the olive oil, add the spring onion (white part), oregano, and saute for 15 seconds.
  2. Add the corn, grated cheese, spring onion green part, 3 tbsp white sauce, salt, and pepper to taste.
  3. Cook for 2 minutes.

How to proceed

  1. Line a medium sized baked dish with butter.
  2. Cut the edges of the bread and soak in milk for a  few seconds.
  3. Place some white sauce at the bottom of the baked dish.
  4. Place one slice of the bread on top.
  5. Place the corn filling on top.
  6. Place one slice of the bread on top.
  7. Place the white sauce on top.
  8. Cover with the grated cheese.
  9. Bake in a preheated oven at 180 degrees  C for 15 minutes till well baked.
  10. Serve immediately.
