Cauliflower jeera rice

For all you weight watchers and diabetics this is a must.

  • Preparation time: 20 minutes
  • Cooking time: 5 minutes
  • Makes: 2 cups of rice

Ingredients

  • 2 cups cauliflower rice
  • ½ tbsp oil
  • 1 tsp cumin seeds
  • Salt to taste
  • 4 tbsp chopped coriander

Method

  1. In a non-stick vessel heat the oil, add the cumin seeds, and saute for 15 seconds.
  2. Add the cauliflower rice, salt to taste, and coriander.
  3. Stir for a minute and serve hot.
