PINEAPPLE PANNA
Beat the heat with this amazing Pineapple Drink! Similar to the classic aam panna but so much better the drink is so fresh and yummy with the strong spices and sweetness from pineapples. This puree is homemade from scratch and you can deepfreeze the purée and drink it whenever. do try it and the sunny days

2 glasses
INGREDIENTS
For the pineapple paste
1 Cup Chopped Pineapple
½ Cup Water
3 tbsp Sugar
Salt to taste
½ tsp Vinegar
½ tsp black salt
¼ tsp Chilli powder
¼ tsp turmeric powder
1 tsp cumin powder
¼ tsp pepper
¼ tsp fennel seeds
To add later
½ cup chilled water
5-6 Mint leaves
Slice of pineapple
METHOD
For the pineapple paste
In a pan heat the water add sugar and pineapple and stir well.
After a minute, add in Vinegar, Salt, Black Salt, Turmeric powder, chili powder, cumin powder, pepper, fennel seeds and let it boil. Keep stirring.
After 5-7 minutes, the mixture will thicken up and pineapples will turn soft. Remove from the gas.
Let this mixture cool down completely.
Blend the mixture into a fine paste. Deep freeze and use at your convenience.
How to proceed
Fill a glass with ice cubes, add in 3 tbsp of the puree, mint leaves and top up with cold water.
Stir once, garnish with a pineapple slice and serve chilled.
