PINEAPPLE PANNA

PINEAPPLE PANNA Recipe|Renu dalal

INGREDIENTS

For the pineapple paste

  • 1 Cup Chopped Pineapple
  • ½ Cup Water
  • 3 tbsp Sugar
  • Salt to taste
  • ½ tsp Vinegar
  • ½ tsp black salt
  • ¼ tsp Chilli powder
  • ¼ tsp turmeric powder
  • 1 tsp cumin powder
  • ¼ tsp pepper
  • ¼ tsp fennel seeds

To add later

  • ½ cup chilled water
  • 5-6 Mint leaves
  • Slice of pineapple

METHOD

For the pineapple paste

  1. In a pan heat the water add sugar and pineapple and stir well.
  2. After a minute, add in Vinegar, Salt, Black Salt, Turmeric powder, chili powder, cumin powder, pepper, fennel seeds and let it boil. Keep stirring.
  3. After 5-7 minutes, the mixture will thicken up and pineapples will turn soft. Remove from the gas.
  4. Let this mixture cool down completely.
  5. Blend the mixture into a fine paste. Deep freeze and use at your convenience.

How to proceed

  1. Fill a glass with ice cubes, add in 3 tbsp of the puree, mint leaves and top up with cold water.
  2. Stir once, garnish with a pineapple slice and serve chilled.
