Arbi masala is a simple Indian vegetable preparation made with boiled or cooked arbi tossed in a blend of spices. The soft texture of arbi works well with roasted cumin, coriander, chilli, and other everyday seasonings, while shallow frying gives the pieces a lightly crisp exterior. Boiling the arbi until just tender makes it easier to peel and prevents it from becoming too soft while cooking. It can be served as a dry sabzi with roti, paratha, dal, or rice and also works well as part of a larger Indian meal.

INGREDIENTS
- 1 ½ cup boiled chopped peeled Arbi (Big pieces)
- ½ cup finely chopped onions
- ½ cup finely chopped tomatoes
- ½ tsp Kashmiri red chilli powder
- ¼ tsp turmeric
- ½ tsp garam masala
- ½ tsp coriander powder
- Hing
- ½ tsp jeera
- 1 tbsp oil
- 1 tsp garlic ginger paste
- Salt to taste
- 1 tbsp chopped coriander
- ¼ tsp Lemon Juice
METHOD
- In a steamer, steam the Arbi until its soft.
- In a pan heat oil and saute the steamed arbi until its golden brown and crispy.
- Set aside.
- In a pan heat oil and saute garlic ginger paste, jeera, hing.
- Mix in onions, tomatoes and salt. Cook for 2 minutes.
- Add in the arbi and saute.
- Add in all the spices, lemon juice and cook for another 2 minutes.
- Finish by adding coriander and serve hot.
