INGREDIENTS
- 7 - 8 eggplant slices
- ½ Cup Besan
- ¼ tsp Haldi
- ¼ tsp red chilli powder
- ¼ tsp Coriander powder
- ¼ tsp Carom Seeds
- Pinch of hing (asafoetida )
- Pinch of Soda bi carbonate
- Salt to taste
- 1 tsp oil
- Beaten Curd
- Tomato
- Pinch red chilli powder
- Tamarind chutney
- Green chutney
- Sev
For the coating

METHOD
- In a bowl mix together all the ingredients to make a powdered mix.
- Coat the eggplant slices with the mixture generously.
- Roast the slices on a tawa with oil. Flip and cook on both the sides properly until crispy.
- Transfer to a plate.
- In a plate take an eggplant slice.
- Top up with your choice of toppings and serve immediately.

Chef's Note from Renu Dalal:
Sprinkle a little salt on sliced brinjal before cooking to help remove excess moisture and improve crispness.
