Besan modak is a festive Indian sweet made using gram flour, ghee, sugar, and simple ingredients, shaped into the traditional modak form. Roasting the besan patiently is the most important step, as it removes the raw flavour and gives the sweet its characteristic nutty aroma. The mixture should be cooked until it reaches the right consistency so it can be shaped without becoming too dry or sticky. Once slightly cooled, it can be moulded into modaks and finished with chopped nuts or a simple garnish. These homemade modaks are a lovely addition to the festive sweet platter, especially during Ganesh Chaturthi.

INGREDIENTS

    • 1 cup Besan
    • 1 cup milk
    • 1/4 cup Ghee
    • 1/2 cup powdered sugar
    • 6-7 Saffron strands (soaked in warm milk)

    For garnish

    • 1 tbsp sliced pistachios
    • Silver Foil

METHOD

    1. In a pan heat ghee and roast besan.
    2. Roast nicely until it starts leaving ghee.
    3. Add in milk and let it thicken up well.
    4. Once done, let it cool down.
    5. Transfer to modak moulds.
    6. Let them set for 5 minutes
    7. Demould and garnish with pistachios and chandi warakh.
    8. Refrigerate and store

Chef's Note from Renu Dalal:

Roast the besan patiently on low to medium heat and keep stirring continuously to prevent it from burning.
