Bread pakoda is a popular Indian snack made by coating slices of bread in a seasoned gram flour batter and frying them until crisp and golden. It can be made plain or with a filling such as spiced potato for a more substantial snack. The batter should coat the bread evenly without being too thin, while frying at the right temperature helps create a crisp exterior without making the bread oily. Serve hot with green chutney, sweet chutney, or ketchup. It makes a simple tea-time snack and is especially enjoyable when served fresh.

INGREDIENTS

    • Slices of brown bread
    • 1 tbsp Green Chutney
    • ¼ cup grated cheese

    For the filling

    • 1 Cup Boiled Potato
    • ¼ Cup chopped onion
    • 1 tsp ginger green chilli paste
    • ½ tsp jeera
    • Pinch of red chilli powder
    • ¼ tsp garam masala
    • Pinch of Turmeric
    • 1 tbso chopped coriander
    • ¼ tsp lemon juice
    • Pinch chaat masala
    • Pinch hing
    • Salt to taste
    • 1 tsp oil

    For the besan batter

    • ½ cup besan
    • 3 tbsp water
    • Pinch red chilli powder
    • Pinch of hing
    • ¼ tsp ginger garlic paste
    • ¼ tsp soda
    • Salt to taste

METHOD

    For the filling

    1. In a pan heat oil and saute jeera, ginger green chilli paste, hing, onion and salt.
    2. Mix in turmeric powder, chilli powder, garam masala, chaat masala and boiled potato.
    3. Mix well, Finish by adding coriander and lemon juice.
    4. Set aside.

    For the besan batter

    1. In a bowl mix all the ingredients.
    2. Make a semi thick batter.

    How to assemble

    1. Spread chutney on both the slices.
    2. Spread the aloo filling & cheese generously on one bread slice.
    3. Sandwich the two together and coat this in besan batter properly.
    4. Fry this in hot oil until golden brown and crispy.
    5. Cut this into 2 and serve hot.

Chef's Note from Renu Dalal:

Dip the bread into the batter just before frying so it does not become too soft or difficult to handle.
