INGREDIENTS

    • 1 cup boiled kabuli chana
    • 1 cup grated carrot
    • 2 tbsp chopped green part spring onion
    • 2 tbsp cranberries
    • 1 tbsp pumpkin seeds (green seed)

    For the dressing

    • ½ tbsp mustard sauce
    • 1 tbsp olive oil
    • ½ tsp lemon juice
    • ½ tsp oregano
    • 1 tsp honey
    • Salt pepper to taste

METHOD

    For the dressing

    1. Mix together all the ingredients.

    How to proceed

    1. Mix all the ingredients and top up with the dressing.
    2. Mix well and serve Chilled.

Toast pumpkin seeds lightly before adding them to the salad for enhanced crunch and flavour.
