Cauliflower kofta curry is a comforting Indian dish made with soft cauliflower dumplings simmered in a rich, aromatic gravy. INGREDIENTS

    • 1.5 cups Cauliflower grated
    • 1 Potato boiled & Mashed
    • 1 tbsp cornflour
    • 1 tbsp besan
    • ¼ teaspoon Garam masala
    • ¼ teaspoon Chaat masala
    • 1/4 tsp turmeric
    • 1/4 tsp red chilli powder
    • 2 tbsp chopped coriander
    • Salt & Pepper to taste

    For the gravy

    • 1 Onion Chopped
    • 2 Tomatoes chopped
    • 3 Dried Kashmiri Red Chillies
    • 1 tsp Chopped Ginger
    • 1 Cinnamon stick
    • 2 Cardomom pods
    • ¼ Cup Cashews
    • ½ Cup Water
    • ¼ tsp Turmeric powder

    Other ingredients

    • 3 Bay leaves
    • 2 tsp Kasturi Methi
    • 1 tsp Jeera
    • 2 tsp Sugar
    • ¾ Cup Water
    • 1 tbsp Oil
    • Salt to taste
    • Oil for frying Kofta

METHOD

    For the koftas

    1. In a plate mash the boiled potatoes. Add in the grated cauliflower
    2. Mix in all the other ingredients and make a mixture.
    3. Once mixed, divide into 12 pieces and make balls of them.
    4. Heat oil for frying the koftas.
    5. Fry these filled koftas on medium heat till golden brown.

    For the gravy paste

    1. Add all the ingredients in a blender to form a smooth paste

    How to proceed

    1. In a pan heat oil. Add in Jeera, bay leaves and saute for ½ a minute.
    2. Add in the gravy paste and mix well.
    3. Add in water, sugar, salt, kasturi methi and mix. Cover and let it cook for 2 minutes.

    To serve

    1. In a bowl, add in the gravy and top up with koftas. Serve hot with rotis or naan.
