INGREDIENTS
- 4 long green capsicums
- 1/2 tsp oil
- 1 tbsp spring onion white part
- 2 tbsp boiled corn
- 1/4 cup grated cheese
- 1/4 tsp green chilli paste
- 1/4 cup white sauce
- 1 tbsp chopped red capsicum
- 1/4 tsp oregano
- 1/4 tsp red chilli flakes
For the filling
METHOD
- Heat oil in a pan and saute spring onions, green chilli paste, oregano, chilli flakes and red capsicum.
- Add in corn, white sauce and some cheese.
- Mix well, cook for a minute.
- Set aside.
- Cut the tops off the capsicum and make a lengthwise slit on the capsicum.
- Scoop out the seeds from the capsicum.
- Brush some oil on the cut capsicums.
- One by one fill your capsicums with the fillings.
- Once done top up with grated cheese.
- Bake these filled capsicums for 7-9 minutes or until nicely baked.
- Serve hot immediately.
