INGREDIENTS

    • 4 long green capsicums

    For the filling

    • 1/2 tsp oil
    • 1 tbsp spring onion white part
    • 2 tbsp boiled corn
    • 1/4 cup grated cheese
    • 1/4 tsp green chilli paste
    • 1/4 cup white sauce
    • 1 tbsp chopped red capsicum
    • 1/4 tsp oregano
    • 1/4 tsp red chilli flakes

METHOD

    For the cheese corn filling

    1. Heat oil in a pan and saute spring onions, green chilli paste, oregano, chilli flakes and red capsicum.
    2. Add in corn, white sauce and some cheese.
    3. Mix well, cook for a minute.
    4. Set aside.

    How to proceed

    1. Cut the tops off the capsicum and make a lengthwise slit on the capsicum.
    2. Scoop out the seeds from the capsicum.
    3. Brush some oil on the cut capsicums.
    4. One by one fill your capsicums with the fillings.
    5. Once done top up with grated cheese.
    6. Bake these filled capsicums for 7-9 minutes or until nicely baked.
    7. Serve hot immediately.
