Flax seed raita is a simple yogurt-based side dish made by combining roasted flax seeds with fresh curd and mild seasonings. The roasted flax seeds add a light nutty flavour and a pleasant texture, while the curd keeps the raita fresh and balanced. Roasting the seeds before adding them enhances their taste and aroma. This raita pairs well with parathas, pulao, khichdi, or everyday Indian meals and can be prepared in just a few minutes.

INGREDIENTS
- 2 tbsp flax seeds
- 1 cup curd
- 1 cup grated cucumber
- Pink salt pepper to taste
- ½ tbsp oil
- ½ tsp jeera
- Pinch of hing
- 5-6 curry leaves
- 2 tbsp chopped mint leaves
- 2 tbsp chopped coriander

For the tempering
METHOD
- Dry roast the flax seeds for a minute or until fragrant.
- Let it cool down and blend into a fine powder.
- In a small pan heat oil and saute curry leaves, hing, jeera, mint leaves and coriander.
- Mix well and set aside.
- Squeeze out excess water from the cucumber and transfer to a bowl.
- Mix in curd, Pink salt, pepper to taste and whisk it well.
- Add the tempering and mix well.
- Serve chilled.
