Chef's Note from Renu Dalal:
Jowar, or sorghum, is one of the oldest grains in Indian cooking and one I keep coming back to for its mild, slightly nutty flavour. Making the flour at home is simpler than most people think — all you need is clean, dry jowar and a good grinder. The key is to ensure the grain is completely dry before grinding, otherwise the flour turns sticky. I always sieve it twice for a fine, smooth texture. Store it in an airtight container away from moisture and it stays fresh for weeks.
