INGREDIENTS

    • 1 cup chopped papaya
    • ½ tbsp lemon juice
    • ¼ cup sugar

METHOD

    1. In a pan add in chopped papaya and sugar.
    2. Keep stirring and cook for 4-5 minutes until sugar melts and papaya softens.
    3. With a masher, lightly mash the papayas.
    4. Remove from heat and let the jam cool down.
    5. Once cooled mix in lemon juice and blend in a blender jar for a smoother texture.
    6. Store in an airtight container jar and refrigerate.

    To serve -

    1. Serve with bread, toast, butter or scones.
