INGREDIENTS
- 1 cup chopped papaya
- ½ tbsp lemon juice
- ¼ cup sugar
METHOD
- In a pan add in chopped papaya and sugar.
- Keep stirring and cook for 4-5 minutes until sugar melts and papaya softens.
- With a masher, lightly mash the papayas.
- Remove from heat and let the jam cool down.
- Once cooled mix in lemon juice and blend in a blender jar for a smoother texture.
- Store in an airtight container jar and refrigerate.
- Serve with bread, toast, butter or scones.
