Kadhai paneer is a popular Indian paneer preparation made with paneer, capsicum, onions, tomatoes, and freshly ground spices. The combination of coriander seeds, cumin, and dried red chillies gives the dish its characteristic aroma and flavour. Cooking the vegetables until just tender keeps some texture in the gravy, while lightly sautéing the paneer helps it hold its shape. A fresh homemade spice blend makes a noticeable difference to the final taste. Serve hot with naan, roti, paratha, or rice for a satisfying meal.

INGREDIENTS
- 1 cup paneer (big pieces)
- 1/2 cup diced onions
- 1/2 cup diced capsicum
- 1 tsp jeera
- 2 tsp oil
- 1/4 tsp kashmiri red chilli powder
- 1/2 tsp turmeric powder
- 1/4 tsp garam masala
- 1/2 tsp coriander powder
- 1 bayleaf
- 1 tsp kasturi methi
- 1 tbsp chopped coriander
- Salt to taste
- 1 cup chopped tomato
For the gravy
METHOD
- In a pan heat oil and sauté jeera, hing, garlic, red chilli, cashews.
- Add in garlic, onion, tomatoes, water and salt.
- Mix well and cook for 2-3 minutes.
- Once done, let it cool down and blend into a smooth puree.
- Heat oil in a pan, sauté jeera, bayleaf, onions, salt.
- Mix in capsicum and cook for a minute.
- Add in all the masalas and the gravy.
- Cook for a minute and add in the paneer.
- Finish by adding kasturi methi, coriander and mix well.
- Serve hot.
