Kadhai vegetable is a simple and flavourful Indian sabzi made with a mix of fresh vegetables cooked with onions, tomatoes, capsicum, and aromatic kadhai spices. The vegetables are cooked just enough to retain some of their natural texture while absorbing the flavours of the masala. Freshly roasted and ground spices add a warm, earthy taste to the dish. Cutting the vegetables into similar-sized pieces helps them cook evenly. Serve hot with roti, naan, paratha, or rice for an easy everyday meal.

INGREDIENTS

    For the vegetables

    • ½ cup diced boiled baby corn
    • ¼ cup diced onions
    • ½ cup diced capsicum
    • ¼ cup sliced boiled French beans
    • ¼ cup diced boiled carrots
    • ¼ cup diced boiled potato
    • ¼ tsp Kashmiri red chilli powder
    • ¼ tsp turmeric
    • ¼ tsp garam masala
    • ¼ tsp coriander powder
    • Hing
    • ¼ tsp jeera
    • 1 bay leaf
    • ½ tsp kasturi methi
    • 1 tbsp chopped coriander
    • 1 tbsp oil
    • Salt to taste

    For the gravy

    • ½ cup chopped tomato
    • ¼ cup chopped onion
    • 2 tbsp cashews
    • 2 garlic cloves
    • ½ Kashmiri red chilli (soak in water)
    • ½ cup water
    • 2 tsp oil
    • Salt to taste

METHOD

    For the gravy

    1. 1) In a pan heat oil and sauté garlic, red chilli, cashews.
    2. 2) Add in onion, tomatoes, water and salt.
    3. 3) Mix well and cook for 2-3 minutes.
    4. 4) Once done, let it cool down and blend into a smooth puree.

Chef's Note from Renu Dalal:

Do not overcook the vegetables; keeping them slightly crisp gives the sabzi a better texture.
