Khubani meetha is a traditional Hyderabadi dessert made with dried apricots that are soaked, cooked, and sweetened until they become soft and syrupy. The natural tartness of the apricots balances the sweetness, while the cooking liquid develops into a light fruit syrup. Soaking the dried apricots well before cooking helps them soften evenly and makes it easier to remove the seeds. The dessert can be served warm or chilled, usually topped with fresh cream, custard, or homemade thick yogurt.

INGREDIENTS

    • 1 cup dried apricots (soak overnight)
    • ½ cup sugar
    • ½ cup water
    • Vanilla essence
    • Orange Food colour

    To serve

    • Vanilla ice cream

METHOD

    1. Soak dried apricots in water overnight. They will fluff up.
    2. Once done, slice them and remove the seeds from all.
    3. Transfer to a non stick pan along with sugar, water and let it boil.
    4. Cook it for about 6-7 minutes, with a masher lightly mash it also.
    5. Finish by adding orange food colour and vanilla essence.
    6. Mix well and let it thicken up.
    7. Let this cool down and serve with some vanilla ice-cream.

Chef's Note from Renu Dalal:

Reserve the soaking water and use it while cooking the apricots to retain their natural flavour.
