INGREDIENTS
- 1 L full fat milk
- 1 tsp lemon juice
- 2 tbsp chopped litchi
- 1 tbso rose syrup
- 2 tbsp powdered sugar
- ½ tsp cardamon (elaichi) powder
- Litchi
- Chopped pistachio nuts

METHOD
- Heat the milk in a vessel on a high flame till it comes to a boil.
- When the milk comes to a boil add the lemon juice.
- The milk will split and the paneer will form.
- Hang the paneer in a wet cloth for half an hour to drain the excess water.
- In a non-stick vessel heat the paneer and sugar till they are well blended.
- Remove from the heat, add the litchi, rose syrup and cardamon powder.
- Mix well and transfer to a piping bag.
- Peel and deseed the litchis.
- Pipe in the prepared sandesh and close the litchis.
- Refrigerate for an hour and eat at your convenience.
- Garnish with chopped pistachio.
