INGREDIENTS

    For the paneer

    • 1 L full fat milk
    • 1 tsp lemon juice

    To add later

    • 2 tbsp chopped litchi
    • 1 tbso rose syrup
    • 2 tbsp powdered sugar
    • ½ tsp cardamon (elaichi) powder

    To decorate

    • Litchi
    • Chopped pistachio nuts

METHOD

    1. Heat the milk in a vessel on a high flame till it comes to a boil.
    2. When the milk comes to a boil add the lemon juice.
    3. The milk will split and the paneer will form.
    4. Hang the paneer in a wet cloth for half an hour to drain the excess water.
    5. In a non-stick vessel heat the paneer and sugar till they are well blended.
    6. Remove from the heat, add the litchi, rose syrup and cardamon powder.

    How to proceed

    1. Mix well and transfer to a piping bag.
    2. Peel and deseed the litchis.
    3. Pipe in the prepared sandesh and close the litchis.
    4. Refrigerate for an hour and eat at your convenience.
    5. Garnish with chopped pistachio.

Drain chenna thoroughly before preparing sandesh to achieve a smooth and firm texture.
