Mishti Doi | Bengali Sweet Yogurt | Homemade Mishti Doi | Traditional Bengali Dessert
Mishti doi is a traditional Bengali dessert made by setting sweetened milk into a thick, creamy yogurt with a characteristic caramel flavour. Milk is slowly reduced and sweetened with sugar or caramelised sugar before being cooled slightly and mixed with a little curd as a starter. The mixture is then left undisturbed in a warm place until it sets. The slow reduction of milk gives mishti doi its rich texture, while the caramelised sugar adds its familiar colour and flavour. Once set, refrigerate it for a few hours before serving chilled. It makes a lovely homemade dessert for festive meals and special occasions.
