Moong dal halwa cake is a creative combination of the rich flavours of traditional moong dal halwa with the texture and shape of a cake. The roasted moong dal gives the dessert its characteristic nutty flavour, while ingredients such as ghee, milk, and sugar bring together the familiar taste of halwa. Properly roasting the dal is important for developing its flavour and removing its raw taste. The cake can be finished with nuts or a light garnish and served warm or chilled depending on the preparation.

INGREDIENTS
- 1 ½ cup yellow moong dal
- ¾ cup ghee
- 3/4 cup sugar
- 1 ½ cup milk
- 1 tsp cardamom powder
- 1 tsp saffron dissolved in water
- ¼ cup chopped almonds
- 1 ½ cup milk
- ½ cup sugar
- 6-7 saffron strands
- Pinch of cardamom powder
- 2 tsp cornflour
- almond slivers
- pistachio slivers
- rose petals

METHOD
- Boil some milk. Mix in sugar, saffron, cardamom powder and let it boil.
- Add in the cornflour slurry and let it boil and thicken up.
- Let this milk cool down.
- Soak the moong dal in warm water for 3 to 4 hours and drain well. Process in a food processor till you get a paste.
- Tie in a muslin cloth and remove the excess water by squeezing the cloth.
- In a vessel heat the ghee and add the moong dal mixture and stir for 8 to 10 minutes.
- Add the milk, sugar and cook for 2 to 3 minutes.
- Add the cardamon powder, almonds, saffron water and stir for 2 to 3 minutes.
- Once done, let it cool down a little.
- Transfer it to a greased cake tin and let it set for 30 - 45 minutes.
- Demould the cake and decorate with almond slices, pistachio slices and rose petals.
- Serve with the chilled milk
