INGREDIENTS
- 1 cup sliced parwal
- 1 cup sliced paneer
- ½ cup sliced boiled potatoes
- ¼ cup sliced onions
- ½ tbsp mustard oil
- ½ tsp jeera
- 2 tsp ginger garlic green chilli paste
- ½ tsp Kashmiri red chilli powder
- ¼ tsp turmeric powder
- ½ tsp coriander powder
- ¼ tsp garam masala
- 1 tbsp chopped coriander leaves
- Salt to taste
- ½ cup water
- Pinch of Hing
METHOD
- In a pan heat oil and sauté garlic ginger green chilli paste, jeera, hing and onions.
- Add salt, parwal, water and cover with a lid. Cook for 3-4 minutes.
- Mix in potatoes, all the spices and coriander leaves. Cook for 2 minutes.
- Serve hot.

Lightly sauté parwal before adding it to the curry to enhance its texture and flavour.
