Pitla is a traditional Maharashtrian preparation made using gram flour (besan) and simple spices. Quick to prepare and deeply comforting, this rustic dish is commonly served with bhakri or rice. Simple, wholesome and flavourful, pitla represents everyday Indian vegetarian cooking at its best.

INGREDIENTS
- 1/3 cup Besan
- ¼ Cup chopped Onions
- 1 1/2 cup Water
- 1 tbsp Oil
- 1/2 tsp Jeera
- Pinch of Hing
- 1/4 tsp Mustard seeds
- 6-7 Curry leaves
- 1/2 tbsp Garlic Green Chilli paste
- 1/4 tsp Red Chilli Powder
- 1/4 tsp Coriander Powder
- 1/4 tsp Turmeric Powder
- 1 tbsp Chopped Coriander Leaves
- Salt to taste
METHOD
- In a pan heat oil, sauté hing, jeera, mustard seeds, garlic green chilli paste, curry leaves and mix well.
- Mix in onions, salt, red chilli powder, coriander powder, turmeric powder and salt to taste.
- Add in besan and roast for 2 minutes.
- Mix in water, coriander leaves and stir well to avoid lumps.
- Cook for 2 minutes, let it thicken up.
- Serve hot with roti.
