Poha bhajiya is a simple crispy snack made with soaked poha, gram flour, vegetables, herbs, and mild spices. The poha gives the bhajiyas a soft texture inside while the outer layer becomes crisp when fried. Soaking the poha just enough to soften it without making it mushy helps the mixture hold together better. Shape small portions of the mixture and fry them on medium heat for even cooking. Serve hot with green chutney, sweet chutney, or a cup of tea.

INGREDIENTS

    • 1 cup poha
    • ¼ cup sliced cabbage
    • ¼ cup sliced onions
    • ¾ cup besan
    • ½ tsp ginger garlic paste
    • Pinch red chilli powder
    • Pinch turmeric powder
    • 2 tbsp chopped coriander
    • ¼ tsp jeera
    • ½ tsp sesame seeds
    • Salt to taste
    • Oil for frying

METHOD

    1. Wash poha with ½ cup water and transfer to a strainer to let it fluff up.
    2. Mix together all the ingredients along with some water to make a semi thick batter.
    3. Drop spoonful of the batter into hot oil to make bhajiyas.
    4. Fry them until crispy and golden brown.
    5. Serve hot with chutney or ketchup.

Chef's Note from Renu Dalal:

Squeeze out any excess water from the soaked poha before mixing to prevent the bhajiyas from becoming too soft.
