INGREDIENTS
- 2 cups peeled and chopped beet (big pieces)
- 1 tbsp Olive oil
- Salt Pepper to taste
- 1 cup rocket leaves
- ¼ cup Feta cheese
- ½ cup caramelized walnuts
- ¼ cup orange Slices
- 1 tbsp balsamic vinegar
- 1 tsp lemon juice
- ½ tbsp olive oil
- Salt Pepper to taste

For the dressing
METHOD
- Place the chopped beetroot in a tray.
- Mix in olive oil, salt and pepper to taste.
- Bake the beetroot for 20 minutes at 180C or until well roasted.
- Mix all the ingredients together to prepare the dressing.
- In a bowl mix together rocket leaves, orange Slices, roasted beetroot, caramelized walnuts and the dressing.
- Top up with Feta cheese and serve immediately
