INGREDIENTS

    For the puree

    • 3 cups chopped spinach
    • ¾ cup chopped boiled mushrooms
    • ¼ cup boiled potatoes
    • 2 ½ cups water
    • 2 garlic cloves sliced
    • 1 tbsp olive oil
    • salt & pepper to taste

    Other ingredients

    • 1/2 tbsp oil
    • ½ cup chopped onion
    • ½ tsp thyme
    • ½ tsp oregano

    To garnish

    • grated cheese

METHOD

    For the puree

    1. In a pan heat oil and sauté garlic.
    2. Add in chopped spinach, salt pepper to taste and cook for 2 minutes.
    3. Mix in mushroom, potatoes and water.
    4. Cook for 2 minutes and let it cool down.
    5. Blend into a smooth puree.

    How to proceed

    1. In a pan heat oil and sauté thyme, oregano and onions.
    2. Add in the pureed soup and mix well.
    3. Let it boil for 2 minutes.

    To serve

    1. Serve hot and garnish with grated cheese
