INGREDIENTS
- 3 cups chopped spinach
- ¾ cup chopped boiled mushrooms
- ¼ cup boiled potatoes
- 2 ½ cups water
- 2 garlic cloves sliced
- 1 tbsp olive oil
- salt & pepper to taste
- 1/2 tbsp oil
- ½ cup chopped onion
- ½ tsp thyme
- ½ tsp oregano
- grated cheese

METHOD
- In a pan heat oil and sauté garlic.
- Add in chopped spinach, salt pepper to taste and cook for 2 minutes.
- Mix in mushroom, potatoes and water.
- Cook for 2 minutes and let it cool down.
- Blend into a smooth puree.
- In a pan heat oil and sauté thyme, oregano and onions.
- Add in the pureed soup and mix well.
- Let it boil for 2 minutes.
- Serve hot and garnish with grated cheese
