Tricolour paniyaram is a colourful Indian snack made in three layers inspired by the colours of the Indian flag. The orange, white, and green layers are prepared using simple batters and vegetables, then cooked together in a paniyaram pan until lightly crisp outside and soft inside. Using naturally coloured ingredients keeps the preparation simple while adding a festive touch to the dish. Cook the paniyarams on medium heat and turn them gently so all sides cook evenly. They are best served hot with coconut chutney, green chutney, or a simple dip, making them a fun option for Independence Day celebrations and family gatherings.

INGREDIENTS

    For the Orange Batter

    • ½ cup idli batter
    • ¼ Cup Carrot puree
    • A pinch of salt
    • ¼ tsp soda bi carbonate

    For the Green batter

    • ½ cup idli batter
    • ¼ tsp soda bi carbonate
    • 2 tbsp Spinach Puree
    • A pinch of salt

    For the white batter

    • ¾ cup idli batter
    • ¼ tsp soda bi carbonate
    • A pinch of salt

    Other ingredients

    • Oil for greasing

    To serve

    • chutney and sambhar

METHOD

    For the Orange batter

    1. Mix in the carrot puree in ½ Cup Idli Batter.
    2. Add in pinch of salt , soda bi carbonate.
    3. Mix well.

    For the White batter

    1. Add pinch of salt, soda bi carbonate in the normal idli batter.

    For the green batter

    1. Mix well
    2. Mix in spinach puree in ½ Cup Idli Batter.
    3. Add in pinch of salt, soda bi carbonate.
    4. Mix well.

    How to proceed

    1. Brush oil in a paniyarappam pan.
    2. Pour in orange batter with a spoon. Let it cook for 15 seconds.
    3. Pour in a spoon of white batter on top. Let it cook for another 15 – 20 seconds.
    4. Followed by the green batter in the end.
    5. Once cooked, turn it over and cook on the other side as well.
    6. Repeat the same procedure for all.
    7. Let them cook for 2-3 minutes or until done.
    8. Serve hot with chutney and sambhar.

Chef's Note from Renu Dalal:

Keep the heat on medium and grease each cavity lightly so the paniyarams cook evenly and release easily from the pan.
