Vrat ki barfi is a simple Indian sweet prepared with ingredients suitable for fasting and commonly enjoyed during vrat days. Depending on the recipe, ingredients such as nuts, coconut, milk, or fasting flours can be combined and cooked until the mixture thickens enough to set. Cooking the mixture to the right consistency is important so the barfi holds its shape without becoming too dry. Once set, cut it into neat pieces and garnish with chopped nuts if desired. It makes a simple homemade sweet for Navratri and other fasting occasions.

INGREDIENTS

    • 1 Cup Water Chestnut Flour
    • ¼ Cup Desiccated Coconut
    • ¼ cup Almond flour
    • Pinch of cardamom powder
    • 2 tbsp sliced almonds
    • 3 tbsp Ghee
    • 1 Cup Milk
    • 1/3 Cup Sugar

METHOD

    1. In a pan heat ghee, and saute the water chestnut flour for 2 minutes or until fragrant.
    2. Mix in almond flour, desiccated coconut and mix well for another 2 minutes.
    3. Mix in sugar, milk, cardamom powder and cook for 3-4 minutes or until it starts leaving the sides of the pan.
    4. Grease a thali with some ghee and transfer the prepared mix to it.
    5. With a back of a spoon, press it down properly.
    6. Let it set or an hour or so and cut into desired shapes.
    7. Garnish with almonds and serve.

Chef's Note from Renu Dalal:

Cook the mixture until it leaves the sides of the pan before transferring it to the greased tray; this helps the barfi set properly.
