Vrat wale aloo is a simple potato preparation made with ingredients that are commonly used during fasting. Boiled potatoes are cooked with spices such as cumin, green chilli, and rock salt, giving the dish a light yet flavourful taste. The potatoes can be cooked until lightly crisp on the outside while remaining soft inside. Keeping the spices simple allows the flavour of the potatoes to come through. Serve hot with kuttu roti, singhara puri, or homemade curd for a satisfying fasting meal.

INGREDIENTS
- 2 cups chopped boiled potato
- ¼ cup chopped roasted peanuts
- 2 tbsp coriander
- 1/2 tbsp oil
- 1 tsp ginger green chilli paste
- 5-6 curry leaves
- 1/2 tsp jeera
- Pinch of Hing
- Salt to taste
METHOD
- Heat oil in a pan and saute ginger chilli paste, hing, jeera, curry leaves.
- Add in boiled potatoes, salt and mix well.
- Cover and cook for 2 minutes.
- Mix in roasted peanuts, coriander and cook for another 2 minutes.
- Serve hot.
