Zucchini chilla is a soft and savoury pancake made by combining grated zucchini with flour, herbs, and simple spices. The zucchini adds moisture and a mild flavour while keeping the chilla light and tender. Squeezing out excess water before mixing helps achieve the right batter consistency and allows the chilla to cook evenly. It makes a quick breakfast, light meal, or evening snack and tastes best served hot with chutney or curd.

INGREDIENTS
- 1 cup grated zucchini
- ½ cup jowar flour
- ¼ cup sattu flour
- ¼ cup grated carrots
- 2 tbsp finely chopped onions
- 1 tsp ginger garlic green chilli paste
- 1 tbsp chopped coriander
- Pinch of red chilli powder
- Pinch of turmeric powder
- Pinch hing
- 1/2 cup water
- Salt to taste
- 1 tsp sesame seeds
- 1 cup grated zucchini
- ½ cup jowar flour
- ¼ cup sattu flour
- ¼ cup grated carrots
- 2 tbsp finely chopped onions
- 1 tsp ginger garlic green chilli paste
- 1 tbsp chopped coriander
- Pinch of red chilli powder
- Pinch of turmeric powder
- Pinch hing
- 1/2 cup water
- Salt to taste
- 1 tsp sesame seeds
- Oil for making the chiila
METHOD
- In a bowl mix together all the ingredients.
- With oil make round chillas on a tawa.
- Flip and cook on both the sides until well done.
- Serve hot.

Cook the chilla on medium heat so it becomes evenly golden while staying soft inside.
