INGREDIENTS

    • 3 whole potatoes
    • 2 tsp olive oil
    • Salt and pepper to taste
    • ¼ Cup grated parmesan cheese

    Other ingredients

    • 1 ½ tbsp melted butter
    • ¼ tsp grated garlic
    • ¼ tsp Oregano
    • ¼ tsp Thyme
    • ¼ tsp Chilli flakes
    • ½ tbsp Finely chopped Parsley

METHOD

    For the garlic herb butter

    1. Mix together all the ingredients to make the herb butter.

    For the potatoes

    1. Place one of the potatoes on a cutting board and lay chopsticks along both of its long sides.
    2. Use a sharp knife to cut the potato into thin slices, stopping when your knife reaches the chopsticks so that the potato stays intact at the bottom. Repeat with the remaining potatoes.

    How to proceed

    1. Place the potatoes on the baking tray. Drizzle with olive oil, sprinkle with salt and pepper, and use your hands to get the oil and seasonings in between the potato slices.
    2. After 10 minutes, brush some more olive oil on the potatoes and continue roasting them.
    3. After 15 minutes, brush the garlic herb butter generously on the potatoes and in between the potato slices too.
    4. Top up with grated parmesan cheese.
    5. Again roast the potatoes for another 10 minutes until the outside is nice and crispy.
    6. Serve these potatoes hot.
