Masala Tindora Sabzi (Ivy gourd)

INGREDIENTS

    • 1 ½ Cup Sliced Tindora (Ivy Gourd)
    • 2 tbsp dessicated coconut
    • 2 tbsp finely chopped onions
    • 2 tbsp finely chopped tomatoes
    • ½ Cup water
    • 4-5 curry leaves
    • ¼ tsp garlic paste
    • 1 tbsp oil
    • ¼ tsp cumin seeds
    • ¼ tsp mustard seeds
    • ¼ tsp hing
    • ½ tsp turmeric powder
    • ½ tsp kashmiri red chilli powder
    • 1 dried kashmiri red chilly
    • ½ teaspoon coriander powder
    • Salt to taste
    • ½ tsp garam masala
    • ¼ tsp lemon juice
    • 1 tbsp chopped coriander

METHOD

    1. Heat oil in a pan and saute cumin seeds, mustard seeds, hing, garlic, curry leaves and dried red chilli.
    2. Mix in onions, tomatoes and salt to taste. Cook for 30 seconds.
    3. Add in sliced Ivy gourd and water. Cover and let it cook for 7-8 minutes or until done.
    4. Once cooked, add in red chilli powder, turmeric powder, coriander powder, garam masala, lemon juice, coconut and coriander.
    5. Mix well and cook for a minute.
    6. Serve hot.
