INGREDIENTS

    For the Ragda

    • 1/2 cup dried White peas
    • 2 cups water
    • 1/4 Cup chopped onion
    • 1/4 cup chopped tomato
    • 2 tbsp Imli puree
    • 1/4 tsp hing
    • 1/2 tsp Cumin seeds
    • 1 tsp Kashmiri red chilli powder
    • 1 tsp Garlic ginger paste
    • 1 tbsp oil
    • 1 tsp garam masla
    • ½ tsp turmeric powder
    • 1 tsp coriander powder
    • Salt to taste
    • ¼ cup chopped coriander

    For the pattice

    • 1 cup boiled potato
    • 2 tbsp chopped coriander
    • 1 tbsp cornflour
    • ½ tsp sugar
    • ½ tsp ginger green chilly paste
    • ¼ tsp turmeric
    • Pinch hing
    • ½ tsp lemon juice
    • Salt to taste
    • Oil to make the patties

    To Serve

    • Imli chutney
    • Chopped onions
    • Chopped coriander
    • Sev
    • Chaat masala

METHOD

    For the white peas

    1. In a pressure cooker add white peas and water.
    2. Cook for 4-5 whistles until well done.

    For the ragda

    1. In a pan heat oil and sauté hing, jeera and ginger garlic paste.
    2. Add in chopped tomato, onions, salt to taste, red chilli powder, garam masala, coriander powder, turmeric powder and cook for a minute.
    3. Add in boiled white peas along with water.
    4. With a masher, gently mash the raga.
    5. Cover and cook for 2 minutes.
    6. Finish by adding coriander.

    For the pattice

    1. Mix all the ingredients together to make a dough.
    2. Divide into 6 equal portions and roast on a pan with oil.
    3. Flip and cook on both the sides until golden brown.

    To Serve

    1. Place the pattice in a plate and top it up with hot ragda.
    2. Add on imli chutney, chaat masala, sev, coriander and chopped onions.
    3. Serve immediately.
