SABUDANA RAITA

Another one of a fasting recipe and staring Sabudana Pearls. Also known as Sago/ Sago Pearls. Sabudana is a good source of energy, easy to digest, and prevents constipation. It is a rich source of carbohydrates and has a cooling effect on the body. This raita is so very tasty and can be made in a jiffy. Who knew Sabudana could be had as a raita or accompaniment too! You have got to try this raita this navratri. Make your fasting days better with this chilled sabudana raita.

INGREDIENTS

  • 1/2 Cup Sabudana Pearls

For tempering

  • ½ tsp Oil
  • ½ tsp jeera
  • 1/4 tsp hing
  • 4 curry leaves
  • 1 tbsp crushed peanuts

Other ingredients

  • ½ Cup Grated cucumber
  • 1 Cup Curd
  • 1/4 tsp red chilli powder
  • 1/2 tsp black salt
  • 1/2 tsp pepper
  • 1 tsp Sugar
  • 2 tbsp chopped coriander

METHOD

For Sabudana

  1. Soak Sabudana Pearls in 1 ½ Cup Water for 4 hours.
  2. Once soaked, boil in hot water for 2 minutes.
  3. Strain and let them cool down.

For tempering

  1. In a small pan heat oil and saute jeera until they crackle.
  2. Add in hing, curry leaves, crushed peanuts . Mix well.

For the raita

  1. In a bowl mix in curd, grated cucumber, coriander leaves, red chilli powder, black salt, pepper and sugar.
  2. Add in the boiled and cooled sabudana pearls.
  3. Top with the prepared tempering.
  4. Mix everything well and serve chilled.
