South Indian sambar is a delicious thick lentil curry made with toor dal and mixed vegetables, tamarind & spices.?Vegetables like drumsticks, tomatoes, beans, carrots, pumpkin are generally used, you can add your choice of vegetables in it too! It is a staple dish in South Indian homes and is also equally popular and loved by many. It pairs well with idlis, dosas, wadas and some prefer to have it with some steamed rice. INGREDIENTS

  • ½ Cup Toor Dal
  • 1/2 Cup Chopped French beans (Boiled)
  • 1/2 Cup Chopped Drumstick (boiled)
  • 1/4 Cup Carrot(Boiled)
  • 1/4 Cup Peas(Boiled)
  • 2 Small Brinjal (Boiled)

For the tamarind pulp

  • 2 tbsp Tamarind

  • ¼ Cup Water

For the tomato paste

  • 1 Tomato

  • 2 Kashmiri Red Chillies

Other ingredients

  • 2 tbsp Oil
  • 1 tsp Mustard seeds
  • 1/4 tsp Hing
  • 7-8 Curry leaves
  • 1/4 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1 ½ tsp sambhar masala
  • ½ Cup water
  • Salt to taste
  • 1 tsp sugar
  • 1/2 tsp lemon juice
  • 1 tbsp Chopped Coriander

METHOD

For the dal

  1. Wash and soak the dal for five minutes.
  2. Add 2 cups of water,pressure cook ½ Cup toor dal for 3-4 whistles or until cooked.
  3. Once cooked, with a hand mixer blend the cooked dal until smooth.

For the Tamarind pulp

  1. Soak the tamarind in ¼ cup water and leave aide for 5 minutes.
  2. Later squeeze out the pulp with your hands.
  3. Sieve the pulp and keep aside.

For the tomato paste

  1. Blanch one tomato and later blend it with 2 kashmiri red chillies in a blender.
  2. Sieve this paste and keep aside.

How to proceed

  1. In a pan heat oil add mustard seeds, hing, curry leaves and saute for ½ minute.
  2. Add in the tomato paste, salt, sugar and cook for a minute.
  3. Add in the red chilli powder, turmeric powder, sambhar masala, tamarind pulp and the pureed dal mixture.
  4. Cook this for a minute.
  5. Add in all the boiled veggies, lemon juice and coriander. Cover and boil for 5-7 minutes.
  6. Serve hot with idlis, dosa or medu vadas.
