SOLKADHI (KOKUM CURRY)

Also known as Kokum curry, this drink is so refreshing and so tasty! Perfect for summers and is very healthy too! Featuring kokum and coconut milk this drink is all you need to keep yourself hydrated. Replace your sodas with this amazing solkadhi to beat the heat. Made with such simple ingredients this drink is a hit! We have used the semi dried Kokum to give the drink a natural pinkish colour. This drink is extremely healthy and keeps you so full and hence helps you loose weight! Kokum reduces acidity and is very good digestion so do try this drink and enjoy it cold with ice!

SOLKADHI (KOKUM CURRY) Recipe|Renu dalal

INGREDIENTS

For the kokum extract

  • 1 Cup Fresh Kokum
  • 1 Cup Warm Water

For the spice paste

  • 3 Garlic Cloves
  • 1 Chopped green chilly
  • 1 tsp Jeera
  • ½ tsp chopped ginger

Other ingredients

  • 2 Cups Homemade Coconut Milk
  • 1 tsp powdered Sugar
  • Salt to taste
  • 2 tbsp chopped coriander leaves

METHOD

For the kokum extract

  1. In a bowl, soak Kokum in warm water for 45 minutes.
  2. After 45 minutes, squeeze out Kokums with your hands to get the Kokum extract.
  3. Strain this mixture and keep aside.

For the spice paste

  1. In a mortar pestel, mix in jeera, green chillies, garlic and ginger.
  2. Grind it into a fine paste.

How to proceed

  1. In a bowl, mix in coconut milk, Kokum extract, coriander leaves, salt, powdered sugar and the spice paste.
  2. Mix well and serve with ice cubes.
